Why did we dine here? – Apex is the restaurant located in the Montage Deer Valley Resort. We were on vacation here and wanted some Foie Gras and found that this restaurant served it. This is a very high end hotel that looks beautiful. We came into this restaurant not knowing much about it, but seeing that the Yelp reviews were generally favorable.
Insider Tip – Try this restaurant in both summer and winter season. The view outside is stellar.

Location – Deer Valley, Utah
Service – Apex had very good service. Clearly summer is their off season, so there were few guests and few servers. The waiter clearly knew the food and helped guide us through the menu.
Verdict – Apex surprised us with excellent food. We got our Foie fix and some of the best food on our trip here. Be sure to visit the Park City, Utah area in the summer if you love biking, hiking, zip lines, and other fun outdoor activities.
Apex’s Summer Menu included several al carte options along with a 3 course for $30 special.
Apex Food Picks:
Mojito ($14) was made by our waiter but still surprisingly hit the mark.
Amuse Bouche of Whiskey Salami with pickles and bread sticks. Simply awesome.
Hot homemade popovers were huge and fresh out of the oven.
Pan Seared Foie Gras ($22) Seasonal Compote, Toast Points – satisfied our cravings. One huge chunk along with top notched bread and cooked cherries.
3 for $30 specials – Heirloom tomato soup – Micro Basil, Rigatoni bolognese – Niman Ranch Beef, San Marzano Tomatoes, Parmesan, Creme brulee – Vanilla Blueberry Biscotti – an incredible value with good portion size and surprisingly high quality.
Apex Caesar Salad, Grilled chicken breast – Sweet corn, farro, Green Beans, White Beans, Okra, Homemade ice cream – also an incredible value. Everything was cooked perfectly and should have cost twice as much.

Utah Trout Amandine ($36) Sweet Corn, Farro, White Beans, Favas was must get. The fish was local and cooked perfectly. Beautiful crust, fresh and flaky fish.
