This restaurant returned its original name: Lai Ching Heen &#8211; Signifying a homecoming, Yan Toh Heen got remodeled in 2022 and returns to its treasured original name, Lai Ching Heen after that. It started with that name back in 1984.  Our latest visit was in summer 2026. Lai Ching Heen is located on the water at the Regent Hong Kong with postcard view of Hong Kong. (Formerly Intercontinental Hong Kong). They received Two Michelin Star in the 2026 Michelin Guide. Chef is Lau Yiu-fai and head chef is  Cheng Man-sang . You&#8217;ll see the name Heen at the end of top restaurants. In Hong Kong, &#8220;heen&#8221; (軒) translates to &#8220;pavilion,&#8221; &#8220;veranda,&#8221; or a &#8220;room with a view&#8221; in Chinese. Choice of any 2 roasted Meats (HK$380=$48) with Roasted Goose and Barbecued pork. They ran out of Premium Barbecued pork belly.  The goose was delicious but had to be eaten with the skin or else it was dense and dry. Barbecued pork comes warm was very good. This was an expensive dinner but when you have limited time in transit! 8.5/10 &#160; Yung Kee Restaurant is a classic Chinese restaurant in Hong Kong covered by all the tour books. They are known for Roast Goose. They received One Michelin star in 2011 and have been around since 1942. They have a multi floor dining room. Special super expensive menus are available to those on the VIP level and Private club. We dined in the 4th floor VIP room, which costs and extra 10%. Beautiful atmosphere in the middle of the wine country, superb service, and of course great food. You could argue that this restaurant or that restaurant has a better beef course or appetizer, but few have the exquisite combination of everything. The French Laundry is a legendary restaurant located in the Napa Valley town of Yountville California, Ground Zero for some of the best restaurants in California. They opened in 1994 and have been legendary ever since. The restaurant received three Michelin stars in 2012 and is at the top of many best restaurant lists. Our most recent visit was in Summer 2021 during the Pandemic. They focus on American food with French influences. Thomas Keller is world renown for some of the best cooking. He focuses on the best ingredients and does not discuss prices with suppliers. This was our first visit in way too many years. In late 2019 we went back to the Ritz-Carlton, Millenia Singapore Colony buffet.  It changed name and upgraded in 2015. The interior is much more ornate and structured. After reading about the food options in 2019, we felt it remains the top buffet in Singapore, in from of Rise and The Line. &#8220;In the late 18th century, the British traveled to the East Indies for trade and commerce; that story is told through the experience at Colony. The restaurant showcases local, Chinese, Indian, Indonesian, Malaysian and Western dishes through seven open kitchens and breakfast, lunch and dinner buffets. Distinct experiences include a Sunday champagne brunch, table-side cocktails and a bakery offering fresh items each day.&#8221; Ritz Carlton Singapore is a restaurant in the posh hotel right near the Marina Bay Sands. The Ritz hotel is a luxury hotel where rooms start at a $500 night. When we were researching our Asia trip, we noticed that Singapore was home to many high end buffets, some of which run every day. We previously ate there in 2011. They focus on modern Chinese cuisine with a focus on elegant T&#8217;ang Dynasty decor.
