Hu-Chiang Dumpling House or HC Dumpling is located in the Cupertino Ranch 99 shopping center. It is a busy place with lines most of the time. This place is obvious known for their Shanghai style dumplings.
Decor, Vibe – Average Chinese restaurant decor. Lots of families and friends getting together. Busy hectic place.

Picks:
Juicy Scallop Dumplings (8pcs $9.95) are their best dumplings. Juicy, good flavor, but limited quantities each day. Hu-Chiang Juicy Pork Dumpling (8 pcs, $6.95) came out steaming hot. Tasty meat and good textured skin.
Fresh Crab Dumpling with Chinese Chive (8 pcs, $8.95) were Juicy and Hot too. Good stuff.
We recently went to Shanghai and got authentic Xiao Long Bao there. Yes they are far better than what we have here.
Fried Golden Milk Buns ($3.95 for 2) or Fried Man Tau with yellowy inside was crispy on the outside, tender on the inside, and very good. A delicious dessert when dipped in sweetened condensed milk. Only slightly greasy.
Deep fried Mini buns ($2.95 for 5) or Fried Man Tau was also awesome. Also available as steamed.
Rice Cake (Not American Rice Cake’s) with sliced pork ($6.95) was done well. Firm texture, good quantity, and good flavor.
OK:
Beef Dumplings – Hu-Chiang Juicy Shanghai Steamed Dumpling (8 pcs, $6.95) was not as tasty as the other 2 dumplings we had.
Green Beans and carrots were served cold. The beans were boiled. Sauce was not great. A weird dish with sesame on top.
Chicken ($4.95) with Wine sauce was too soaked in wine, making flavor too harsh.
Wine soup with dumplings is an acquired taste dessert. This was a good combination of flavors.
Beef Soup in Bowl ($5.95) with Melon was super hot but pretty simple and not very flavorful. Personal serving size.
Baby Bok Choy ($9.95) with Garlic was more like pea shoots and was very watery.
Pans:
Green Onion Pan Cake ($2.95) were not crispy. They were soggy.
Hu-Chiang Dumpling House service was fair at best, have to ask for most things. This is a popular place for dumplings and is one of the better ones in the San Francisco Bay Area. Prices are reasonable, so experiment with dishes.

I went to Vietnam and just loved the fried man tau / mini buns – do you have a recipe for it so that i can make it at home?
